Cooking has been my passion for over 25 years. I joined the culinary school when I was 14. Graduated at 16 with 2 diplomas and started to work 2 days after graduation.
Coming from a place where food have been treated with a cultural approach for centuries with a diversity of specialties, even in the smallest villages made me understand that I have the opportunity to transform in few hours, or even minutes an ancestral edible product into a today moment of pleasure. Cooking professionally should be done with real passion. Feeding other it is not an insignificant act. It is absorbed, swallowed and can affect your mood, decisions, thoughts etc… Transform an ephemeral moment into an unforgettable memory. It cannot be more carnal and sensual. As such, I really think that a recipe cannot be totally set. It needs to have room to evolute, change with us through our life as our palate changes.
